A page from Summer

Ok so i haven't posted every day, I will get better I promise :) So far for April I'm doing pretty good.  I have walked 4 out of the 6 days so far, planning a walk for tonight as well. I have doubled my routine at the gym as well.. I took Saturday and Sunday off the gym as I usually do, my eating has been up and down.  I am able to eat really well all day long until dinner, although my dinners haven't been completely unhealthy (veggie wraps and salads) they have had more calories then I would like right now..

  So its been a loooong week and its only wednesday.. Between endless interviews and exercise I have exhausted my self this week.. All I wanted to do tonight was crawl onto the couch order a pizza and pig out.. But I decided not to , I went to the store before I came home and got some more veggies, allready having broccoli at home.

So, my title comes from Summer because I listen to her make all this yummy healthy food and thought I would try my own soup tonight. It turned out good, not great, I took a very very basic recipe and adjusted it alot.  But it still needs some work on it. I liked the taste and texture of it(it could be more creamy) but added to much pepper. So you'll have to stay tuned for a revised recipe as I try it out more :)

So here is my trial recipe
Broccoli Soup
 (low Fat)
3 cups of broccoli florets chopped
3 carrots, peeled and chopped
2 celery stalks , chopped
1 small onion, chopped
1 1/2 tbsp minced garlic
1 cup of water
2 cups of vegetable broth
pepper to taste
oregano about 1 tsp
basil about 1 tsp
garlic powder about 1 tsp
Combine all the above ingredients into a pot and and simmer for 10-15 minutes until the veggies are tender
Puree 3/4 of the mixture in a blender then pour it back into the pot with the remaining soup mixture.

In a small bowl combine 3 tbsp of cornstarch and 1 1/2 cup of milk and whisk together.
Slowly add it to the soup and stir together.  Bring to a boil for 2-3 minutes.
Top with fresh parsley.

I have a picture but have no idea how to post that :).  I have to admit that I added a small bit of graded cheese to my soup cause its that kinda day (and by small i mean about 3 slides down the grader).
I still have to figure out how many calories it would be.. So i will work on that as well. I think I need to take away some of the liquid I used and that might make it better, and of course not as much pepper the next time :)

Here goes nothing!

After being forced into starting a blog here I am. I'm Kim. I'm here to support my friends, share my success and mostly because my ever so needy friend summer threatened my friendship if I didn't.

I've already lost 55 pounds and my goals are to lose another 20-25 by the summer.  I am 1/4 of the way to reaching my goal. I' m using this blog to help with my motivation and to motivate my friends in any way I can.
I am currently mapping out an April plan for myself, this will include adding more walking into my weeks, at least 3-4 one hour long walks a week on top of going to the gym a minimum of 4 times a week. as well as a healthy diet plan with cheat days included :) because I dont think I could survive without my cheat days.
I'm hoping with this I will be reminded of what I am doing when I am craving fries pizza or any of that yummy good stuff.
I am a vegetarian but do occasionally eat seafood. 

And as I have been told by Summer ;
My other goal is to be more like summer who is awesome I love every moment I spend with her, it's such a blessing that I met her. :D - its true!
As much as funny thing that is I do believe I am able to draw from her motivation in obtaining her goals to help me achieve my goals.  I am also very greatful for the wonderful women I have in my life, My friends keep me motivated to be a better person and I am able to draw from their strength to help me thru the good and bad times.. I would be lost without them all! As well as my wonderful man, dog, cat and my family. 

So to keep her helping me out (and avoid a beating :p) I am finishing my first ever blog.
